I must tell you right up front that this brownie is a fake. I have been trying to low carb a brownie for some time and have never been successful yet so if anyone has a great recipe that’s fairly healthy, I would love to share :-)
I love, love, love brownies so I just couldn’t let National Butterscotch Brownie Day pass just because I couldn’t make a low carb one from scratch so I did the next best thing … I used Pillsbury’s Sugar Free Brownie Mix with great results.
I made the mix according to package directions and then added 1/3 cup of chopped walnuts and 1/4 cup of butterscotch chips. I tried to be as cautious with these morsels as possible but I also wanted to taste them.
The recipe came out great and dear hubby was willing to eat them; however, he did mention that he couldn’t really find the butterscotch chips so he added extras to his. We both agreed that the best bites were when we got brownie, walnuts and butterscotch all in the same bite.
And now that Butterscotch Brownie Day is soon coming to a close, the hubs still has a whole bag of butterscotch morsels to nosh on … he’s not complaining.

Great idea to combine butterscotch bits AND walnuts in the brownie mix. I’m a huge butterscotch fanatic and I bet I would have loved it.
