This isn’t really a recipe, per se, but a technique. In low carb  and gluten free circles, making rice from cauliflower has been done forever. I truly doubt that this will be new for anyone but I decided to post about it just in case there’s one lonely person that’s never heard of this before.

Doesn’t this rice look good? It’s made from cauliflower and it’s so very versatile. Cauliflower is very low in calories and carbs with a very mild taste that can mimic several things. It can also be mashed like potatoes very successfully.

I have heard of people making this with the s blade on their food processor but I have never been successful with this technique. I tend to pulverize it into nothingness. I prefer to grate it by running it through the grater blade on my food processor; however, I know many people that use a hand grater.

I like to grate a whole head at one time and then put in a covered bowl in the fridge so I can grab what I need whenever I need it. I truly use this as rice and have found it to behave extremely similarly to the real thing. If it’s raw (like in a rice salad) my hubby won’t touch it but if you cook it, he will willingly eat it and agree that he can’t really tell a difference … and he eats a lot of rice.

Now look at this super yummy fried cauliflower rice. It totally tastes like the real deal. All I do is saute the cauliflower and frozen veggies in butter and then toss in an egg. Salt, pepper and you’re done!

If butter’s not your thing then just use earth balance spread or any mild oil for sauteing.

    I’m also Low Carb . I had previously been a Cauliflower hater. I am now buying at least 2 heads per week. My son is pre diabetic. We would like to control by diet as long as possible. I don’t care what anyone says, Low carb is working for both of us. Plus the weight loss is a great plus. Today I made mashed Cauliflower, with the leftovers I’m going to make them into something like potato pancakes. Happy Cooking!

    I don’t understand why cauliflower should be an alternative to rice. Whole grain brown rice is naturally gluten-free, is full of good fats omega 3&6 with NO cholesterol. It is a source of protein, fiber and many vitamins and minerals. If you are “dieting”, just stop and educate yourself on changing your diet. Whole grains are a huge staple in a healthy lifestyle. Carbs are not bad, but the type of carbs can be.

Although, I’m certain you’ve not had time to read about me or my nutritional proclivities, rest assured … I am a registered nurse with lots of scientific background and a graduate degree.         Thank you for your response. I am sure you are much more qualified than I am, but it just concerns me when people have been misinformed. To my knowledge, the belief that diabetics should limit carbs is a myth. The American Diabetes Association recommends the same healthy balanced diet for everyone. http://www.diabetes.org/diabetes-basics/diabetes-myths/
        Whole grains are essential to everyone. Eliminating them gives someone a much greater risk for heart disease. My mother suffers from reactive hypoglycemia, and was misinformed by her doctor about how should should be eating. Many doctors have done this to their patients. In my experience, processed sugar and other carbs such as white bread, white rice, and white pasta are things everyone should avoid. Brown rice is not on that list.

        • Thank you for your thoughtful reply. There are many different schools of thought on the carb intake of diabetics and I have no issue with those who wish to decrease their intake as low as possible. On the upside, cauliflower is very healthy :-)
