Please welcome Abeer and her family recipe for Peanut Butter Chocolate Chip Cookies (which should have posted yesterday … on National Peanut Butter Cookie Day).
Hey everyone! My name is Abeer and I blog at cakewhiz.com. I am very happy to be guest posting here at CJ’s awesome blog. Normally, my postings focus on cakes but I have a major sweet tooth and can’t stop myself from baking or sharing other sweet treats either. Since it is national peanut butter cookie day, I am very excited to share my family recipe for peanut butter and chocolate chip cookies…. YUMMM!
There are many recipes for peanut butter cookies out there. I have seen countless variations and I have even seen one that uses no flour or sugar. I tried that but it wasn’t my type! This, on the other hand, is totally my type… soft and chewy!
I feel that there is something very comforting about peanut butter. Maybe it’s the fact that it reminds us of our childhood when life was simple as we would sit infront of the tv, watching cartoons and munching away on those peanut butter and jelly sandwiches….hehe.
Whatever the case may be, I don’t think there is anything out there that can beat the flavors of peanut butter and chocolate mixed together in a single cookie! Don’t you agree?
Even though I love peanut butter, I remember going through a phase where I started hating it *gasp*. It was during undergrad. I would take a peanut butter and jelly sandwich to university everyday since I hated the food being served in the cafeteria. But, after a semester of eating nothing but peanut butter and jelly sandwiches for lunch… I was sick of them … I didn’t want to ever see peanut butter again. Fast forward a few months and I was somehow back to loving peanut butter again…lol.
To make these cookies, you will need the following ingredients:
1/2 cup flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 cup smooth peanut butter
1/4 cup mini chocolate chips
1 tsp baking soda
1 tbsp vanilla extract
1/2 tsp almond extract
2 tbsp peanuts
And here are the steps:
In a deep bowl, add flour, eggs, peanut butter, brown sugar, granulated sugar, vanilla extract, almond extract, and baking soda. Mix everything… you don’t even need a mixer. You can just mix with a big wooden spoon until everything is well-blended.
Now, add peanuts (preferably roasted) and chocolate chips. Mix once again.
Take portions of this dough and make small balls and place them on a cookie tray lined with parchment paper.
Bake these cookies at 325 degrees for 15 minutes. The cookies will get bigger and turn slightly brown around the edges.
And you are done!
