These are miscellaneous items that are not quite ready for their own blog post. These can be things I’m working on, kitchen mishaps, new acquisitions, funny things, etc. These may or may not be coming to a blog post soon :-)

Picked up some new foodie things … Shortbread pan, Muffin Top pan & European Lemon Zest :-)
This butterscotch biscotti is my very first attempt at biscotti making. It turned out so good so I’m going to have to make more of these.
These pumpkin cookies turned out great; however, they were made with regular, all purpose flour and granulated sugar. The hubs and I don’t regularly eat with these high carb ingredients so we probably won’t make these again.
My attempt at low-carbing the pumpkin cookies was not successful. The texture changed dramatically & they tasted awful :-(
My first attempt at shortbread. The taste was wonderful but it didn’t come out of the pan too well. Will have to make this again.
Remember those brownie cookies (from Giada) that I made recently? Those cookies were to-die-for so I have to low carb them. This is my most recent attempt. The cookies on the right were made Whey Low Granular (the sugar substitute that I’ve had the most luck with) instead of regular sugar. Very interesting that they taste the same but the texture is way off. The crispy, crackly texture on the exterior of the cookie is completely gone. Instead the exterior is smooth and shiny. This baking escapade really reminded me of the scientific properties of sugar. Sugar doesn’t just contribute sweetness to a recipe but also many other things … sugar tenderizes, retains moisture, improves shelf life, contributes brown color and/or caramelized or baked flavor, assists in leavening, can provide bulk, reduces iciness/hardness in frozen desserts … and on and on and on. To make a long story short, replacing sugar is hard which is why I tend to bake, bake and re-bake until I get something where I want it. After I made these, I ran out of chocolate chips so decided to try it out on white chocolate chips. Look at the dramatic difference … I love the scientific aspect of baking :-)

These are all perfect for Autumn. I can feel the cool Fall mornings and the sweet scent of the season. I bought a Pumpkin Spice flavored coffee creamer the other day and this cookies and others Autumn sweets will be perfect with it. Thanks.
