What a week it’s been. I was finally starting to feel better from my knee procedure when my Physical Therapist upped the ante with my exercises. Since last Wednesday, I have been in excruciating pain and taking pain pills round the clock. I had been cleared for six PT appointments so I thought last week was my final visit but my PT says I need more therapy. Oh, well … No pain, no gain, right? Hopefully, I can rally and put something together for Thanksgiving or the hubs and I will be having Ezekiel cereal with soy milk for the holiday :-)
Last week, I mentioned the beginning of my vegan experiment and I’m happy to report the first weeks results are better than I had planned. My goal is to have a fasting blood glucose (blood glucose level first thing in the morning) less than 100 while consuming mainly legumes, grains, vegetables and fruits. As you can see by the chart below, I made my goal!
Returning to my vegan ways has been rewarding and challenging, at the same time. I don’t know if it’s mental or physical but I feel better. Moving from a diet of all protein and fat to mainly complex, low GI carbs has been a mental hurdle though as I put on 5 lbs almost overnight (it’s a normal physiological process when your body burns carbs for fuel instead of fat but depressing nonetheless). Not really doing my knee any favors but it’ll settle out in due time.
Before my setback with physical therapy, I did get to hobble around the kitchen a little bit, though …
Pumpkin Baked French Toast that did not work out for me. Obviously, this was in the oven too long but it was still wet and mushy in the center so I modified the recipe and tried again. The second one was just as wet :-(
This vegan chocolate wacky cake was simply amazing. Definitely remaking this one!
Practiced my pie crust for the big feast on Thursday …
