With the Super Bowl coming up and with the San Francisco 49’ers as NFC champs, I’m in a small bites state of mind. Appetizers, starters, canapes, hors d’oeuvres, antipasto, meze, finger foods … Just can’t get them out of my mind. Therefore, since the hubs and I are starting to put together our super bowl menu, I thought I would share some of our favorites and there’s no better place to start than pico de gallo.
Pico de Gallo is a condiment or relish that’s similar to salsa; however, it is made from fresh ingredients instead of being cooked, liked salsa. Truth be told, I had never made pico before. Obviously, I’ve been eating it forever but Whole Foods always did such a great job chopping everything up so I never took the time to do it myself. The super bowl is a great opportunity to try my hand at this one so I went for it.
I didn’t really have a recipe to go from, I just chopped up what I thought should go in there and stirred it all up. Oh my goodness, it was fantastic.
- 1 cup red cherry tomatoes, chopped
- 1 cup yellow cherry tomatoes, chopped
- 1/2 red onion, chopped
- 1 clove garlic, minced
- 1 tsp cilantro, chopped
- 1/2 jalapeno, seeded & chopped
- Salt & Pepper to taste
- Wash & chop all vegetables
- Mix together & serve with tortilla chips
