Pico de Gallo with Baked Corn Tortilla Chips

With the Super Bowl coming up and with the San Francisco 49′ers as NFC champs, I’m in a small bites state of mind. Appetizers, starters, canapes, hors d’oeuvres, antipasto, meze, finger foods … Just can’t get them out of my mind. Therefore, since the hubs and I are starting to put together our super bowl menu, I thought I would share some of our favorites and there’s no better place to start than pico de gallo.

Pico de Gallo

Pico de Gallo is a condiment or relish that’s similar to salsa; however, it is made from fresh ingredients instead of being cooked, liked salsa. Truth be told, I had never made pico before. Obviously, I’ve been eating it forever but Whole Foods always did such a great job chopping everything up so I never took the time to do it myself. The super bowl is a great opportunity to try my hand at this one so I went for it.

Pico de Gallo

I didn’t really have a recipe to go from, I just chopped up what I thought should go in there and stirred it all up. Oh my goodness, it was fantastic.

If you’ve never made your own pico then this is your chance. By the way, goes great with the baked sprouted corn tortilla chips I told you about, yesterday ;-)

  1. Sounds great – and to save any of my fellow UK inhabitants looking it up, cilantro is coriander over here!

  2. That right there is some of my favorite stuff ever. Although up in the northeast here, we just call it fresh salsa. Because we’re uncool like that.
