Comfort food is always welcome whenever stress is high and I need to feel better. One of my favorite foods is pizza and I could eat it almost every day and not get bored. When I was in college, one of my go to pizzas was the Bacon Cheeseburger Pizza from Domino’s. Not really the height of culinary excellence but it tasted good and made me feel better, especially when I could get a coupon (similar to these Domino’s Coupons at http://www.couponraja.com/dominos-pizza.html).
Recently, there’s been a lot of stress in my life and I truly felt the need for some comfort food so I immediately thought of making my own Bacon Cheeseburger Pizza. Not for the sake of making something, which is what I normally do, but I need to have cheese and carbs (you know carbs make you feel better, right?). My pancreas wasn’t thrilled but my head and heart felt much better after.
No need to provide a recipe as this was just thrown together with refrigerated whole wheat dough, ground beef, bacon, pickles and cheese. Oh, okay … Maybe, I’ll at least describe what I did ;-)
Rolled out the refrigerated dough and prebaked for a few minutes. While it was baking, I added some mustard to some pasta sauce I had left over in the fridge and prepared the other ingredients. After the crust was partially cooked, I added the sauce, ground beef and bacon bits. Then I added some pickles, mozzarella cheese and cheddar cheese. Put it back in the oven for another ten minutes.
While it was baking the second time, I de-seeded and diced some roma tomatoes. After I pulled it out of the oven, I added the tomatoes and a drizzle of mustard just for extra kick.
The hubs and I did not even think of calories or nutritional value, just feeling better for the moment. Plus, tomorrow’s another day … We’ll think about nutrition tomorrow :-)
