On the day after New Year’s Day, leftover “Hoppin’ John” is called “Skippin’ Jenny,” and further demonstrates one’s frugality, bringing a hope for an even better chance of prosperity in the New Year, or so says Wikipedia. I love Wikipedia and I love Hoppin’ John so I say we go with it.
Yesterday’s Hoppin’ John Soup was fantastic but we do have leftovers so I toasted the cornbread and reheated the soup … voilá … Skippin’ Jenny :-)
It doesn’t look quite as vibrant and colorful as before but it still tastes great. Anyone else having leftovers today?
