Bittersweet Chocolate Blondies with Walnuts (lower carb version)

Today is National Bittersweet Chocolate Day & January 22 is National Blonde Brownie Day so I thought I would have a little fun and combine the two. Now that the holidays are over, it’s back to counting carbs and tweaking recipes until the cows come home.

I wouldn’t necessarily call this a low carb blondie but it is drastically reduced from the original version from Ina Garten (the Barefoot Contessa).

As I usually do, I prepared the recipe as written for the first go ’round so I could taste what the author originally intended and what my target would be. Then I started to tweak it until I found something that would work for me and my family.

The original recipe was so dense & sweet that I honestly couldn’t eat it. I thought that it was just me (because I’ve been eating low carb for so long). Maybe the regular version was just too sweet for me, I thought. However, I did give some to the hubs and he practically gasped from the sugar and heaviness. He quickly agreed that the recipe needed some carbs removed.

If you click through to The Food Network site, you’ll easily see that my version looks nothing like the original; however, I do like mine better. This one is cakier & darker but the taste is much preferred in our house and suits our palate more appropriately. 

Bittersweet Chocolate Blondies with Walnuts (Lower Carb)

Ingredients

  • 2/3 cup almond flour
  • 2/3 cup white whole wheat flour
  • 2/3 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 1 cup butter, unsalted
  • 3/4 cup low carb brown sugar replacer
  • 1/4 cup brown sugar, light
  • 3/8 cup low carb sugar replacer
  • 1/8 cup sugar
  • 2 tsp vanilla bean paste
  • 2 eggs, large
  • 6 oz walnuts, coarsely chopped (about 1-1/2 cups)
  • 10 oz chocolate chips, bittersweet (about 1-1/2 cups)

Instructions

  1. Bring all ingredients to room temperature.
  2. Preheat oven to 350 degrees.
  3. Prepare a 9x13 pan with butter, parchment or both.
  4. In a medium bowl, whisk together dry ingredients (flour, baking soda, salt)
  5. In a stand mixer, cream together butter and sugars until light / fluffy.
  6. While the mixer is working, whisk together eggs & vanilla in a cup and set to the side.
  7. Turn mixer off, scrape down the sides of the bowl, turn back on low.
  8. Slowly pour in the egg / vanilla mixture.
  9. Turn mixer off, scrape down the sides of the bowl, turn back on low.
  10. Slowly add in flour mixture just until batter comes together.
  11. Turn mixer off, scrape down the sides of the bowl, turn back on low.
  12. Add in nuts / chocolate and mix just until incorporated.
  13. Alternatively, you can add the nuts / chocolate with a spatula if desired.
  14. Scoop the batter into the prepared pan and smooth top with spatula.
  15. Bake for 30 minutes with aluminum foil covering the top (baked goods with sugar replacers brown very quickly).
  16. Remove foil and bake for another 30 minutes.
  17. Place on wire rack to cool completely before serving.

Please note that the original recipe only bakes for 30 minutes; however, my version took much longer. I made several iterations of this recipe and all my versions took between 40-60 minutes for baking so please check yours often to determine the appropriate baking time.
