I knew ANZAC (Australian New Zealand Army Corps) Day was coming up and since I’ve never had Anzac Biscuits, I couldn’t resist giving THE royal recipe a go. If this ANZAC Biscuit version was good enough for Queen Elizabeth, Princess Diana, Prince William & Harry then they are certainly good enough for me.

People Magazine ran a story about Chef Darren McCrady and his time serving for the royal family. In the 1980′s, the Queen was preparing to tour Australia & New Zealand and he wished to serve something that was culturally relevant.

ANZAC Day is very similar to Veteran’s Day in the U.S. and this was a cookie that was created & served during World War I to fill a void. This biscuit/cookie was very useful  because it was dry, hard and kept well so it could travel long distances to the troops.

Now, this is an annual tradition and people make these every year to remember and revere their forerunners for their sacrifices. I thought it was just about time that I gave these a try and I’m glad I did. They are delicious & historically significant.
