Baking is my passion and cookies are my favorite thing to make … probably because there’s so much science involved. It’s very precise and many things can go wrong with cookies, in general, then throw in the low carb twist and you’ve got a true challenge.
In my mind, I tend to group my low carb recipes into two groups – low carb or lower carb. The level of low carb is different for many people and there’s no “specific” definition of how many carbohydrates that makes something low carb.
For me, low carb means that it is a recipe that fits within the guidelines set forth by my health care team (I’m a type 2 diabetic & had bariatric surgery) and I eat it whenever I wish to have it. Lower carb means that the recipe has had carbohydrates significantly reduced from a traditional version but is not something that I eat freely.
